Naturally occurring in fruits, pectin is used primarily for promoting gel structures in jams. We use two types at Sweet Studio; medium-set citrus pectin and firmer-set pectin NH. Pectin produces a low-viscosity gel but will set if used correctly and the pH of the solution is not too low. Pectin is suitable for gluten-intolerant people and vegans, and is available from health food stores, specialist food ingredient stores and online.

Citrus Pectin A complex carbohydrate that is used as a gelling agent. It is present and extracted from apples and citrus fruits. It comes in powder form and dissolves in water; it forms a gel with the addition of acid (such as lemon juice). It is essential in jams, marmalades and preserves.
