Quinoa (pronounced ‘keen-wah’) is an edible seed native to South America, but now being produced in other countries, including Australia. It is high in fibre and energy and is considered a super food. Quinoa is cooked in a similar fashion to rice and drained. It is spread for drying (dehydration) and then puffed with the application of heat in the same way as for puffed rice. Puffed quinoa is excellent in pastry confections and is available in supermarkets, specialist food ingredient stores and health food stores as well as online.
