Specialised baking or freezing mats used in commercial pastry kitchens. They are available flat in sheets or in the forms of shapes or indents and are ideal for cold preparations – jellies, mousses or ice creams – or for hot preparations such as baking sponge cakes. There is now a vast array of these mats and they are recommended for ease in preparations with multiple layers or components. They can be found in specialist kitchen supply stores or online.
