Otherwise known as bicarbonate of soda or baking soda, it is found in fine white powder form and has a slightly salty taste. It is used in baking as a leavener in baked goods. When mixed with cream of tartar, it forms baking powder. It helps to keep vegetables green during cooking due to the preservation of chlorophyll. It is widely available from supermarkets and other food stores.
