After scraping out the seeds of vanilla pods, the remaining pod can be dried out and mixed with refined or unrefined sugar and stored in a cool, dry place. The vanilla will infuse the sugar, which can then be used in custards, creams or baked products. Not to be confused with commercially prepared vanillin sugar, which uses a synthetic vanilla substitute.
