We use the following products: ‘Jaina’ white chocolate (31% cocoa butter); Nayarit’ milk chocolate (37% cocoa solids); Kendari’ dark chocolate (60% cocoa solids)’; and Tarakan’ dark chocolate (75% cocoa solids). Substitute other high-quality brands if you wish, but ensure they have a similar percentage of cocoa to the type of chocolate specified in the recipe. www.cocoaalliance.com
