Octopuses are found right around the Australian coast, from shallow tidal pools to ocean depths of more than 3000 m. They differ from squid and cuttlefish in that, while they all have eight arms, octopuses lack the two longer tentacles, side fins and internal shells. Their heads are also round instead of cylindrical. Octopuses need to be tenderised before being cooked; traditionally fishermen beat them against the rocks to do this, but today they’re usually tumbled in a small cement mixer.
