When preparing fresh or dried hot red or chilli (chili) peppers, always wash your hands directly after handling and make sure you do not put your hands near your eyes before you do so.
To seed a fresh hot red pepper, hold the stem end in one hand and, using a sharp pointed knife, cut through both sides of pepper. Then, scrape out the seeds with the point of the knife.
To seed a dried hot red pepper, cut off the base of each pepper at the stem end and roll the pod between thumb and forefinger to loosen the seeds. Shake seeds out the open end of pepper.
