Chinese Broccoli (Brassica alboglara)

Chinese broccoli is not like European-type broccoli. It is very crunchy and slightly bitter and more resembles Swiss chard in flavour. It is quite delicious with an earthy, “green” taste. It has deep olive green leaves and sometimes white flowers. It is usually available only at Chinese markets but is well worth the search. If you can find it, look for stems which are firm and leaves which look fresh and green. It is prepared in exactly the same way as broccoli and should be stored in a plastic bag in the vegetable crisper of the refrigerator where it will keep for several days. Where Chinese broccoli is not available, substitute ordinary broccoli.
