Chinese Wood Ear Fungus

These fungi are the larger variety of the Chinese tree fungi described above. Prepare, soak, and trim them in the same manner. Once soaked, they will swell up to four or five times their size. Rinse well and cut away any hard portions. Sold in Chinese markets they keep indefinitely when stored in a cool, dry place.
