Glutinous Rice Flour: This flour, made from glutinous rice, gives quite a chewy texture to the dough and is widely used in China for making rich dim sum pastries. However, it is not an acceptable substitute in recipes that call for regular rice flour, but can be stored in the same way.

Rice Flour: This flour is made from raw rice and is used to make fresh rice noodles. Store it as you would wheat flour.
