The Chinese make large sheets of fen, which means rice noodles, from a basic mixture of rice flour, wheat starch (not flour), and water. This pasta is steamed in sheets and then, when cooked, is cut into noodles to be eaten immediately. A very popular street snack in southern China, the fresh noodles are most often served with a sauce.
