Sesame Oil

This aromatic and strongly flavoured, thick, rich, golden brown or dark coloured oil is made from toasted and roasted sesame seeds, which have a distinctive, nutty flavour and aroma. It is widely used in China, although in limited amounts and not normally for cooking. Only in northern China do cooks sometimes combine it with other oils as a cooking oil. Added as a final seasoning, or used as a marinade, it subtly enriches a dish without overcoming its basic flavour.
