This hardy winter vegetable peeks through the snow with red or crimson colours, thus its name. The cabbage is pickled and can be bought in cans at Asian speciality markets. It adds a pungent, slightly sour taste to dishes when used as a flavouring, or it can be used as an interestingly textured vegetable ingredient in stir-fried dishes.
