Table salt is the finest grind of salt. Many chefs feel that kosher or sea salt has a richer flavour than ordinary table salt. Sea salt is frequently found in bins at the Chinese markets. Rock salt is most often known for its role in freezing ice cream, but the larger crystals make an excellent medium of heat conduction, and rock salt is often used in certain kinds of Chaozhou (a regional southern cooking style), especially with chicken or squab dishes.
