Chilli Sauce

Chilli sauce is a bright red, hot sauce which is made from chillies, vinegar, sugar, and salt. It is sometimes used for cooking, but it is most often used in China as a dipping sauce. There are various brands available in supermarkets and Chinese markets, and you should experiment until you find the one you like best. If you find it too strong, dilute it with hot water. Do not confuse this sauce with the chilli bean sauce which follows.
