Chilli Bean Sauce

This is a thick, dark sauce or paste, hot and spicy, made from yellow soybeans, chillies, and other seasonings. Widely used in cooking in western China, there are as many types and varieties as there are people. Be sure to seal the jar tightly after use and store in the refrigerator. Do not confuse it with chilli sauce which is a hot, red, thinner sauce made without beans and used mainly as a dipping sauce.
