Smaller varieties of mangetouts are found in the markets of China; the larger ones are found in the West. But all of them are sweet and crispy. This familiar vegetable combines a tender, crunchy texture and a sweet, fresh flavour. In China, mangetouts are simply stir-fried, with a little oil and salt, and. bits of garlic and ginger root. Often they are combined with meats. Look for pods that are firm with very small peas, which means they are tender and young. Mangetouts are readily available at supermarkets. They keep for at least a week in the vegetable crisper of the refrigerator.
