Star anise is the hard, star-shaped seed-pod of the anise bush. (It is also known as Chinese anise or whole anise.) It is similar in flavour and fragrance to common anise seed but is more robust and liquorice-like. Star anise is an essential ingredient of five-spice powder and is widely used in braised dishes to impart a rich taste and fragrance. Sold by Chinese markets in plastic packs, it should be stored in a tightly covered jar in a cool, dry place.
