Place the wrapper in your left hand (or reverse these instructions if you are left-handed). Spoon a tablespoon of filling into the centre and pinch together two sides of the wrapper to meet and seal in the middle. Stabilise this with the thumb and forefinger of your left hand, and then use the thumb and forefinger of your right to seal the right side of the wrapper. To do this, make little pleats with your index finger in towards the join you have made at the centre, pressing the other side of the wrapper with your thumb to meet it; your thumb also does the job of pushing in the filling as you go. Repeat with the left side of the wrapper.
