This shape can be a little trickier. Have a look at the step-by-step instructions. We use it for our vegan momos, but there are no rules!

Place the wrapper in your left hand (or reverse these instructions if you are left-handed). Using your right hand, spoon a tablespoon of filling into the centre, then pinch a small fold in the dough to make a pleat. Keep pinching and pleating, little by little, rotating the momo slightly as you work your way around. Your thumb shouldn’t move: as your index finger keeps pinching in a circular motion, each new fold should meet the first fold held by your thumb. Use the thumb of your left hand to gently push in the filling as needed. Eventually you should end up back where you started. Seal the momo with a final pinch.
