When your heavy, outdoor wooden table flies past the kitchen window you know you have chosen to live in a windy spot. There is no escaping the howling wind in this treeless corner of north-west Scotland, but the glorious mountain view through every window of Richard and Isabelle Flannery’s home makes up for it. The premises for Highland Charcuterie and Smokehouse Ltd is behind the house in a shed that Richard built and is kitted out with large storage fridges and sharp knives for Isabelle to work her magic.
