Rory Stone, the owner of the Highland Fine Cheeses in Tain, is not under any illusion that the approach to his dairy is picturesque. While Evanachan Farm Micro-Dairy is a located on a homely farm on a hillside above Loch Fyne, and Connage Highland Dairy is set amongst lush fields on the Moray Firth, both with their milking cows grazing in grassy meadows, Highland Fine Cheeses is housed in concrete and steel on an industrial estate. Rory jokes that best thing for it would be a stick of dynamite but what he produces within the labrynthine depths of his dairy is a sheer delight β some of the best cheeses in Scotland.
