When it comes to cheese making in the Highlands, all roads lead to Kathy Biss. At some point on their journey, dairy farmers, cheese makers, university researchers, even a group of Cistercian monks who farm on Orkney and an Amish couple from Lancaster county in Pennsylvania, have learned their trade, or sought advice, from Kathy who ran the West Highland Dairy at Achmore, near Plockton, for 32 years with her husband, David. Kathy is a rare breed โ an expert in dairy technology. Her cheese making course was the only place in Scotland where you could get genuine artisan dairy training.
