Dried and fresh beans are a Georgian staple. Lobio, whether they’re stewed dry beans, or boiled green beans (often served with walnut sauce, as in pkhali), appear on every supra table. Kidney beans are common, but many thinner-skinned varieties ranging from pale beige to near-black can be found in late summer at the markets. There are speckled beans like tiny bird’s eggs too.
