Butter is ubiquitous in Georgia as almost everyone has access to a cow. It’s one of the main fats in cooking, either whole or clarified (erbo), and is a key element in many dishes (it’s rubbed onto baked khachapuri to soften and enrich the dough). In the highlands, simple breads may be filled with a roux of butter and flour (kada).
