Matsoni is a fermented milk product similar to yogurt. It is creamy and has a mild, sour or tart flavour. It’s used as one of the dough starters for khachapuri and other filled breads, and also appears in many recipes. Look for similarly live, unsweetened, probiotic yogurt or kefir.
