A shallow, woven basket used to hold an artisanal bread dough’s shape during the final rise. Unlined willow baskets are known as brotformen and coarse muslin-lined ones are known as bannetons. These baskets not only determine the final shape of a loaf, but also leave a pattern on the crust when dusted with flour.
