Also known as a speed rack or bun pan rack, a rolling rack is a cart with slots to hold sheet pans loaded with bread or rolls to be proofed. For proofing, the entire rack is generally enclosed with a custom-fitted plastic cover that can be closed with a zipper or Velcro to keep the dough at the proper temperature. The rack can be rolled around the kitchen with ease to be placed where needed at any time.
