As you peruse the kay wot recipes, you’ll notice they all contain an optional spice blend called Ye’wot Qimem. This blend of peppery and warm spices is quick and easy to make if you have an electric spice grinder; you can also find it ready-made in Ethiopian specialty stores. While it does add a little something-something to the stews and sauces, it’s not super noticeable, and the recipes have been written to be fabulous with or without it.
