Boiling and Peeling Potatoes

Fill a large pot with salted water and add the potatoes. Bring to a boil over high heat. Decrease the heat and simmer until the potatoes are fork-tender but not mushy, 20 to 30 minutes (depending on the size and thickness of the potatoes). Drain the potatoes and rinse them under cold water until cool enough to handle; the skins should peel off easily using your fingers.
