A dark, nutty oil extracted from roasted sesame seeds, used extensively in Japanese and Korean grilling. One good brand is Kadoya from Japan. Look for it at Asian markets and in natural foods stores. (Steer clear of domestic sesame oils, most of which lack the roasted flavor of the Asian.)
