Refers both to a chalky paste made from sesame seeds and a sauce made from this paste mixed with lemon juice and water. The latter is a popular accompaniment to Lebanese and Middle Eastern–style grilled seafood. Tahini can be purchased at Middle Eastern markets, natural foods stores, and in the ethnic food section of most supermarkets. Store tahini at room temperature. Stir with a fork until smooth before using.
