Spaghetti squash, or vegetable spaghetti, has one of the best flavours of the squash family, a lovely yellow colour, and an intriguing consistency after cooking. It looks like a tangled mass of spaghetti – hence its name.

This is most delicious served with a strong, cheesy sauce, flavoured with grated nutmeg and put briefly under the grill or in a high oven before serving, so that the top browns a little. If you don’t want to make a cheese sauce, simply mix the baked flesh with plenty of butter, salt and black pepper and sprinkle with grated Parmesan cheese on top.
