In season from April to October, a fresh lobster is a real treat and it can usually be bought ready cooked. Be sure to check that both the claws are attached and that the lobster feels heavy for its size. If it is too light it means it is not fresh and the meat has had time to dry up a little. A 1.2kg (2Β½lb) lobster is ample for 2 servings with homemade mayonnaise and a salad of mixed leaves.

You will need a heavy sharp kitchen knife to cut through the shell or you can use a heavy Chinese-style cleaver.
