Like mackerel, these oily fish have a strong flavour that can withstand the intensity of pungent spices. Sardines are slightly smaller than mackerel, but are generally prepared and cooked in much the same way, being coated in a spice paste and grilled (broiled) or fried.

Sardines are flavoursome and nutritious.
