All sizes of prawns and shrimp are caught and eaten along the coasts of India, from succulent king prawns (jumbo shrimp) and tiger types to tiny shrimp. They are ideal for use in many delectable dishes, from rissoles and curries to pilaus and spicy mixed seafood broths, among many others. They require a little preparation before use (see box), but cook very quickly and are extremely versatile.
