The seeds of these beautiful fruits can be extracted by tapping the skin all around with the handle of a large knife and cutting the fruit in half widthways. The skin can then be easily peeled off like an orange. Discard the bitter white membrane. Alternatively, buy ready-prepared seeds. Pomegranate imparts a delicious tangy flavour.

Ruby-red pomegranate seeds can be eaten whole or pressed to extract their juice.
