(a) Wipe tomatoes and remove stems. Grade and pack in small quantities in bags. (b) Skin and core tomatoes. Simmer in own juice for 5 minutes until soft. Sieve, cool and pack in boxes. (c) Core tomatoes and cut in quarters. Simmer with lid on for 10 minutes. Put through muslin. Cool juice and pack in boxes, leaving 1in/2.5cm headspace. High Quality Storage Life: 12 months.
