(a) Use small, young, mild turnips. Peel and dice. Blanch 2½ minutes. Cool and pack in boxes. (b) Cook turnips until tender. Drain and mash. Pack in boxes, leaving ½in/1.25cm headspace. High Quality Storage Life: (a) 12 months, (b) 3 months.
