Pears should be ripe, but not over-ripe. They discolour quickly and do not retain their delicate flavour in the freezer. Peel and quarter fruit, remove cores, and dip pieces in lemon juice. Poach in 30% syrup for 1ยฝ minutes. Drain and cool. Pack in cold 30% syrup. High Quality Storage Life: 12 months.
