Freshness of bacon is the first vital step to successful freezing. Try and get the bacon on the day that the retailer gets delivery from his supplier. Determine storage period in relation to freshness, and reduce the recommended period if in doubt. Smoked bacon can be stored for longer than unsmoked bacon. The quicker bacon is frozen right through, the better it will be. It is therefore inadvisable to freeze pieces weighing more than 5lb/2.5kg.
