Young game is best for freezing. All game should be hung to its required state before freezing, as hanging after thawing will result in the flesh going bad.
All game should be kept cool between shooting and freezing; care should be taken to remove as much shot as possible, and to make sure the shot wounds are thoroughly clean. Birds should be bled as soon as shot, and then hung to individual taste. After plucking and drawing, the cavity should be thoroughly washed and drained and the body wiped with a damp cloth. The birds should then be packed, cooled and frozen like poultry.
