Pasta can be frozen successfully to be used with a variety of sauces. Composite meals such as macaroni cheese can also be frozen when cooked. Pasta shapes can be frozen to use with soup; but they should not be frozen in liquid as they become slushy.
Pasta should be slightly undercooked, in boiling salted water. After thorough draining, it should be cooled under cold running water in a sieve, then shaken as dry as possible, packed into polythene bags, and frozen. Composite dishes can be reheated in a double boiler or in the oven under a foil lid. High Quality Storage Life: 1 month.
