Dry green pods full of sticky, tiny brown or black seeds which have a sweet flavour and pungent aroma. If you need ground cardamom, open the pods and grind the seeds. Ready-ground cardamom quickly loses flavour. Use pods whole or crushed. Brown cardamom has a peppery flavour not suitable for sweet dishes.
