dal (dhal) is used to describe not only an ingredient but a dish made from it. In India, dal relates to any type of dried split pea, bean or lentil. The cooking times vary as do the texture and flavour. A dal dish can be a thin soup or more like a stew. All dal should be rinsed before use.
