The dried seeds of a Mediterranean plant, fennel seeds are oval, greenish yellow, with ridges running along them, and look like large cumin. Used as an aromatic and a digestive. To intensify the flavour, dry-roast the seeds before crushing them. Available whole or ground, Best freshly ground.
