Not a true seed, but a dried legume. Ochre in colour and almost square, with a groove down one side, fenugreek has a curry aroma (it is a major ingredient in commercial curry powders) and is best dry-roasted for a few seconds before use. Don’t brown them too much or they will be bitter.
