Made from sugar cane, this is a raw sugar with a caramel flavour and alcoholic aroma. Jaggery, which is sold in lumps, is slightly sticky and varies in colour depending on the juice from which it is made. Jaggery can also refer to palm sugar. Soft brown sugar can be used as a substitute.
