The dried purple fruit of the gamboge tree which is used in southern Indian, Gujarati and Maharashtran cuisine to impart an acid fruity flavour. Kokum looks like dried pieces of purple/black rind and is quite sticky. It can be bought from Indian food shops and is sometimes called cocumful. A smoked version which is called kodampodli is also available. Kokum needs to be briefly soaked before use.
